Sneak the veggies in Mac&Cheese

I love Butternut Squash soup – looove. However, soup is one thing that is hard to feed to Max. The other night while preparing my butternut squash soup, I had to think about how I would serve this dinner to Max. Knowing that he loves pasta, I cooked up some macaroni. After the macaroni had been cooked, I simply spooned some butternut squash soup into the bowl and voila, dinner! Max ate his entire plate in minutes. When I looked at the pasta, I realized that it looked exactly like Mac&Cheese – so I got an idea!

The next night, rather than having soup again – I made a ‘sneak the veggie in’ Mac and Cheese. I was surprisingly delicious!

All I did was make some pasta – heat up the soup and stir it in the pot. Pour into a casserole, top with cheese and pop it in the oven at 375 for about 10 minutes or so (until the cheese is melted). I do want to experiment with the choice of cheese. I used a three-blend cheese of mozzarella, provolone and parmesan. P liked the cheese, I didn’t as much. But experimentation can wait til next time.

Is this healthier? I would say no – my butternut squash soup recipe does have loads of heavy cream in it, but at least you are getting some veggies in rather than just having cheese and pasta for dinner. Also, for people (like me) who get upset tummies from too much melted cheese – this is a great alternative.
