Well since I was home today – I felt that I could really participate in the ever-popular What I ate Wednesday!
Breakfast consisted of a piece of whole wheat toast with peanut butter and sliced strawberries. I did have some more strawberries than what was on the plate as Max was eating some too.
Leftover Pesto Chicken from Boston Pizza. We didn’t go to our regular BP last night and it wasn’t as good. Not sure what BP thinks pesto is – but this wasn’t it! It was better last night. I did not finish this bowl.
I wanted to use up a sweet potato, so I started thinking about what I could make with it. I found a small chicken breast in the freezer, saw some salsa and decided Salsa Chicken it was! I baked the sweet potato for about an hour and a half. In the last 30 minutes, I placed the chicken breast in a pan, smothered it in salsa and baked. After the sweet potato was done cooking, I spooned it out and mixed it with a bit of low fat cream cheese. Because I was watching Chopped – I decided to try and “plate” my meal in less than one minute (I get bored at home – leave me alone…). I placed the sweet potato at the bottom, covered with some corn, sliced the chicken and placed it on top. I then added some diced avocado and voila! dinner!
Clearly – the meal sucked 😀 (just kidding)
I had four dark chocolate covered cranberries for dessert.
I only used a portion of the avocado, so I am about to make some guacamole! Ohhh yeah!

I have two cups of coffee in the morning and three teas throughout the day. I have water with all of my meals.
