#1 Better Eats?
My diet has been awful lately. I partially blame commuting and that every other day my schedule doesn’t allow for lunch. Every other day I teach periods 1,2 and 3 with only 40 minutes for lunch (that is bell to bell), 20 of that is spent in my car and 10-15 minutes is getting my boots on/bag collected and then walking to and from the car. It leaves approximately 5 minutes to eat something and go to the washroom. Needless to say, I’ve been just shoving some vegetables and cheese (and maybe a chocolate bar or two) to sustain energy for 75 minutes. I think over eat at 2pm and tend to eat a random dinner afterwards. Schedule aside, I’ve also become lazy and not been eating enough green vegetables and way too carb-happy. Since my schedule flips when I return to school, I should be able to eat lunch again. My parents got me Run Fast, Eat Slow for Christmas and I am hoping to try a number of recipes soon. I’ve already made roast chicken and about to make the Chicken and Rice soup recipe as well. What I like about the book is that the recipes seem easy to understand and utilize ingredients that can be found pretty much anywhere.
#2 Speaking of Eats
I found the best recipe for Brussel Sprouts. Jamie Oliver’s Brussels with Hussle is a great way to eat brussel sprouts. The brussel sprouts didn’t even taste like brussel sprouts! Delicious! I even used my food processor. Now that I’ve figured out how to use it, maybe I should use it more!
#3 Still working on my home gym
I did manage to clean up the gym space downstairs. I still need to level my treadmill before I really start using it. Hoping to get that today. We cleared out the storage unit the other night, which means I have all my running photos and medals back. Not sure what I’m going to do, but you all know all that running gear is being put up somewhere.
I even got the latest edition of iRun magazine with Lanni on the cover to add to the wall of runners.
#4 Another book to read
My brother picked up The Magnolia Story for me for Christmas. I’ve already read it and enjoyed the book. They have a pretty unique story and were not always super successful. I did order a subscription to their magazine that is launching this spring. I really like Joanna’s style and apparently so does Max. He has been telling me that he wants to move to their homes….
#5 Ashton Brew Pub
Seriously delicious eats and good beer too. We finally made our way to the restaurant on Christmas eve. Everything was made fresh and we will definitely be back.
