Yesterday we woke up to about 10 cm’s of snow of the ground, recovering the crappy snow mounds that looked like yuck after this week’s topsy turvy temperatures. Max and I had a pretty chill day yesterday – we watched the snow, went to the mall, napped and then made food for Daddy’s birthday. I had a couple of cups of coffee in my Starbucks mug and a David’s Tea in the afternoon – yum! After making all the food, I decided to be dumb for a minute and grab a hot pot handle and burned myself – GOOD JOB SELF! After running my hand under cold water and holding an ice pack – it is all better now minus one red spot.
For last night’s dinner I made homemade beefaroni. The recipe is almost identical to a regular bolognese sauce – but with macaroni noodles it just tastes different. It is also very much lasagna, but with half the amount of effort (and mess!).
1 can diced tomatoes
1 can crushed tomatoes
Oregano – about a tablespoon
Basil (fresh if you have it) – about a table spoon
Salt and Pepper – to taste
Optional: Green Pepper, mushrooms, zucchini or any other veggie you want to have (we had mushroom in ours)
1. Boil a pot of salted water – when boiling put your pasta in. Preheat your oven to 375 degrees
2. Diced finely a whole medium onion and put into a large saucepan with a dash of olive oil
3. Cook the onions for a minute and then add your ground beef, oregano, basil, salt and pepper
4. Cook until the beef has browned. Drain off excess fat
5. Add your can of crushed tomatoes and quickly drain off some of the water in the diced tomato, then add it to your pot
6. Add your optional veggies here (add peppers in a bit sooner)
7. Once your macaroni has cooked, drain and then put the pasta into the large pot with your sauce
8. Mix all together. Throw in some grated cheese (a handful) for good measure. Put into some sort of casserole dish. I used a dutch oven – but you can just anything you have!
9. Once mixed and put into a casserole, add a layer of mozzarella cheese. Cover with a lid or tinfoil
10. Place your casserole into the oven – bake for about 15 minutes (shorter if you are using a shallow dish). Last 5 minutes, uncover and let the cheese get all nice and bubbly.
11. Dish it out and ENJOY!
Sorry no finished plate picture today – about 1 minute after shooting the last picture I was cursing up a storm because I touched the dutch oven’s handle…….
